Peanut Ginger Pasta

Ingredients
- 2-1/2 tsp grated lime peel
- 1/4 c lime juice
- 2 Tbsp reduced-sodium soy sauce
- 2 tsp water
- 1 tsp sesame oil
- 1/3 c creamy peanut butter
- 2-1/2 tsp minced fresh ginger root
- 2 garlic cloves, minced
- 1/4 tsp salt
- 1/4 tsp pepper
- 8 oz uncooked whole wheat linguine
- 2 c small fresh broccoli florets
- 2 med carrots, grated
- 1 med sweet red peppers, julienned
- 2 green onions, chopped
- 2 Tbsp minced fresh basil

Preparation
Step 1
Place the first 10 ingredients in a blender; cover and process until blended.
Cook linguine according to package directions, adding broccoli during the last 5 minutes; drain.
Transfer linguini and broccoli to a large bowl. Add remaining ingredients. Add peanut butter mixture and toss to combine.
**I made extra sauce and it soaked right in.
