Ingredients
- 2 cups uncooked quick cooking oats
- 1/4 cup wheat bran
- 1/2 tsp. baking powder
- 1 cup strawberries, hulled and cut into quarters
- 1/2 tsp. kosher salt
- 1 tsp. ground cinnamon
- 1 1/2 cups almond, coconut, soy or fat-free milk
- 2 over ripe bananas, mashed
- 1 tsp. vanilla extract
- 2 tbsp. light butter, melted
- 1/4 cup egg substitute or equivalent to 1 egg
- 1/4 real maple syrup or agave

Step 1
1.Preheat oven to 375°. Spray 8 inch square pan with cooking spray.
2.In a large bowl, combine oats, wheat bran, baking powder, strawberries, cinnamon and salt.
3.In another medium bowl, mix together remaining ingredients.
4.Stir wet ingredients into dry and make sure it is fully incorporated.
5.Pour batter into the pan. Stir to make sure strawberries are evenly distributed in the pan.
6.Bake for 35 to 40 minutes.
