Ingredients

  • 1 lb pancetta
  • 2 lb beef or turkey
  • 2 carrots (sml or 1 med)
  • 1 onion
  • 2 cloves garlic
  • 1 bay leave
  • some rosemary
  • pinch all spice
  • 2 lb any short pasta
  • 1 c chicken stock
  • 14 oz Italian tomato
  • 1 c ricotta cheese
  • mozzarella

Preparation

Step 1

1. In a large pot start with the pancetta, let that cook then add your meat. Cook that until almost done, then add your carrots, onions, garlic bay leave and rosemary.
2. Add a pinch of all spice and the tomatoes. Let the tomatoes come to a simmer and cook for a few minutes. Then add your pasta.
3. At this point turn of the heat and add the ricotta cheese. Place this in a oven safe dish and cut the mozzarella on top, bake in the oven at 400 until the cheese melts.
