Ingredients
- 2 T butter
- small onion diced
- 14.5 oz Chicken broth
- 3 Potatoes peeled & diced
- 3 T Flour
- 2 1/2 C Milk
- 1/4 t Salt
- 1/2 t Pepper
- 2 C Cheddar cheese
Preparation
Step 1
Saute onion in butter until tender. Add broth and potatoes, bring to a boil. Reduce heat & simmer 20-25 minutes until potatoes are tender. Add remaining ingredients except cheese. Cook until soup is thickened & heated through. Stirring constantly- add cheese, stir until melted
