Ingredients

  • 2 C granulated sugar
  • 12 T unsalted butter, cut into 1 T sections
  • 1 C heavy cream
  • 1/2 tsp vanilla
  • 1-3 tsp. kosher salt (to taste)

Preparation

Step 1

Heat sugar over medium high heat, stirring often. The sugar will start to clump together and then break down into a liquid. Whisk constantly and heat to 350° on a candy thermometer.

Carefully add the butter. Stir until butter is melted completely.

Carefully add heavy cream. Let boil for 3 minutes.

Remove from heat and stir in vanilla and salt.

Let cool before pouring into jars for storage.
Store in refrigerator.

*Pour over shortbread for salted caramel shortbread bars
*Add to buttercream for caramel buttercream
