Ingredients
- 2-3 boneless chicken breast, sliced
- Salsa (add to taste)
- 11 oz. can Mexi-corn (Green Giant brand)
- 11 oz. can black beans (rinsed and drain)
- White rice (either minute rice or regular-your choice)

Step 1
Prepare the rice separately. While rice is cooking, spray skillet with cooking spray and heat. Add sliced chicken and cook until no longer pink. Stir in one 8 oz. jar of mild salsa, one 11 oz. can of drained Mexi-corn and one 11 oz. can of black beans. Heat thoroughly. Spoon mixture over rice and serve. Add shredded cheddar cheese if desired.
