My version of Oatmeal Chocolate Chip Cookies with an added bonus- dried mixed fruit.

Oatmeal Chocolate Chip Fruit Cookies 1 Picture

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup quick oats (not instant)
  • 1 cup dark brown sugar, packed
  • 1/2 cup white sugar
  • 1 cup unsalted butter, softened
  • 2 Tbs honey
  • 2 tsp pure vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips
  • 1 cup dried fruit
  • (I used King Arthur's Dried Mixed Fruit)

Preparation

Step 1

1. Preheat oven to 300° F.
2. In a medium bowl combine flour, soda, salt and oats. Mix well and set aside.
3. In the mixing bowl of an electric mixer blend the two sugars. Add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla and eggs. Mix at medium speed until light and fluffy.
4. Add the flour mixture, chocolate chips and dried fruit mix, and blend at low speed just until combined. Do not over-mix.
5. Drop by rounded tablespoons or use a cookie scoop onto parchment-lined cookie sheets, 1 1/2" apart. Bake for 22-24 minutes or until cookies are light golden brown. Immediately transfer cookies with a pancake turner to a cookie rack or a cool flat surface.
