Ingredients
- 1 large tomato
- I green bell pepper
- 1 bunch green onions, sliced
- 6 fresh mushrooms, sliced
- 2 garlic cloves, minced
- 2 (16 ounce) cans black-eyed peas, rinsed and drained
- 1 cup diced celery
- 4 ounce jar diced pirniento, drained
- 8 ounce bottle Balsamic vinegar dressing

Step 1
Seed and chop tomato; chop bell pepper. Place tomato, bell pepper, green onions, mushrooms, and garlic in a large bowl. Stir in peas, celery, pimiento, and dressing.
Cover and chill, stirring occasionally, 8 hours.
Drain salad and spoon into a lettuce-lined platter.
