26/02/15-VVG for me. I didn't really do it justice because I'd made it for dinner at the same time as making Dan's birthday dinner (lobster and hash browns) so by the time I sat down, I wasn't that hungry.

NOODLES****Udon Noodle Bowl 1 Picture

Ingredients

  • 2 oz. fresh Udon noodles
  • 1 packet instant Miso soup mix (Miyasaka Jozo Co.)
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon hot sesame oil
  • 1 large egg
  • 2-3 oz. frozen cooked shrimp (or other protein of choice)
  • 2 heads baby bok choy, separated
  • 2 shiitake mushrooms, thinly sliced
  • 2 green onions, sliced on the bias
  • 1/2 fresh Thai chili, finely minced (I didn't try this the first time but it could handle it)
  • 2 slices ginger root, peeled and thinly julienned
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • chopped fresh basil, mint or coriander for garnish
  • Shichimi Togarashi, to serve

Heat the hot oil in a small non-stick pan, mix up the egg and make a small omelet. Remove, cut into thin strips and set aside. Alternately, you could top the finished soup with a halved hard-boiled egg (or even a poached one)

Pour hot water over noodles in a bowl, let them sit for 30 - 60 seconds, drain and transfer to bottom of serving bowl.

Bring chicken broth to a simmer, add the bok choy and cook for a few minutes until stems soften somewhat. Remove with spider and add to noodles in bowl.

Add mushrooms to broth, cook a couple of minutes and add to noodles in bowl.

Add shrimp, and cook needed amount of time, depending whether they are raw or not. Add to noodles in bowl.

Add the Miso soup mix and the fresh chili, if using, to the broth remaining in the pot (topping up as needed - you want about 1 cup) and simmer for a minute or two. Stir in the sesame oil and soy sauce and pour over the noodles.

Top with the green onions, ginger slices, egg strips, herbs (if using) and Shichimi Togarashi (easy if you've used the fresh chili) and serve.
