Ingredients
- 1 lb 4 month aged Manchego cheese
- 2 TBS capers, drained and rinsed
- ½ green bell pepper, seeded and chopped
- 1 small yellow onion, peeled and chopped
- 1 TBS chopped flat leaf parsley
- ½ cup sherry wine vinegar
- 1 tsp sea salt
- 1 tsp chopped garlic
- ¾ cup fruity extra-virgin olive oil
- ½ tsp ground black pepper
- 1 *1 cup pitted manzanilla olives (not stuffed), sliced
- ½ cup roasted red peppers, drained and chopped

Step 1
1. Remove rind from cheese; cut cheese into 1 inch cubes (I do ½ inch cubes)
2. Combine cheese and remaining ingredients in a large bowl; mix well. Marinate at room temperature for 30” before serving. (Or cover and refrigerate for one week.)
·*these are just green olives – and I use the ones stuffed w/ pimientos
