Roasted Chicken

Ingredients
- 1 large lemon
- 1 – 2 cloves of garlic finely chopped
- 2 handfuls’ of fresh thyme leaves
- sea salt and black pepper
- ½ c soft butter
- 3 lbs potatoes peeled and cut into chunks

Step 1
1. Preheat oven the oven and the roasting tray to 425. Wash the chicken inside and out and pat it dry with a kitchen towel.
2. Using fingers part the breast skin from the meat and remove.
3. With a peeler take the zest of a lemon and place it in a bowl along with thyme, garlic and s & p – smash all the seasonings into the butter.
4. Rub the seasoned butter all over the chicken including btw the skin and the meat – slash the chicken around the thighs and make sure some of the butter goes in and around this area as well.
5. You can stick half the juiced lemon into the cavity of the chicken if you like. Put the chicken into the roasting pan and surround it with the diced potatoes – bake for 25 mins.
