  • 3 lbs Yukon gold potatoes, scrubbed
  • 2 quarts canola oil

Step 1

Cut potatoes into uniform fries with mandoline.
Rinse fries in warm water, drain and dry. In deep fryer or large stockpot, heat oil until thermometer reaches 325 degrees.
Using slotted spoon or fry basket, carefully lower about 2 cups of fries at a time into the oil. Fry for 4-5 minutes, until they begin to color. Remove from oil, drain on paper towels. Let cool 10 minutes.
Raise oil temp to 365 degrees. Lower the fries, 2 cups at a time, into oil for 1-2 minutes, until deep golden and crispy. Drain on paper towels, season with salt. Serve immediately.
