Zuchinni Pineapple

A good way to use up all that zuchinni in the garden.
Tastes just like crushed pineapple. Can be used in recipes calling for crushed pineapple.

Ingredients
- 1 gallon of zuchinni cut into small pieces
- 3 cups sugar
- 1 - 48 oz. pineapple juice
- 1/4 cup lemon juice
- 2 Tbsp. pineapple extract

Preparation
Step 1
Put all ingredients in a large pot and boil for 20 minutes.
Pack in hot sterilized jars and process in hot water bath for 10 minutes.
Cost = approx. .25 pint.
