Lemon Drop & Strawberry Parfait with Yuzu Cream 0 Picture

Ingredients

  • Yuzu cream:
  • ¼ cup Yuzu juice
  • ½ cup Lemon juice
  • 2/3 cup Sugar
  • 4 Yolks
  • 3 eggs
  • 1 tablespoon Lemon zest
  • 4 ounces butter, chilled
  • Strawberry Gelee:
  • 250 grams strawberry puree
  • 125 grams sugar
  • 6 sheets gelatin, bloomed
  • Garnish:
  • Strawberry lollipops
  • 3 lemon lollipops crushed and baked in a 300 degree oven

Preparation

Step 1

Yuzu cream:
1. Combine all ingredients except butter in a Bain-Marie
2. cook until thickened
3. Mount with cold butter
Strawberry Gelee:
1. Warm puree and sugar
2. Add gelatin
3. Pour onto sheet tray and chill
Garnish:
1. Crush lemon and strawberry lollipops. Spread on a silpat lined tray
2. Bake at 300 until melted
