Ingredients

  • 2 stalk celery, chopped
  • 1 large onion, roughly chopped
  • Olive oil
  • 6 cloves garlic, minced
  • 2 heaping tbsp tomato paste
  • 1 tbsp salt
  • 2 cups chicken stock
  • 2 cups beef stock
  • 2 cups water
  • 28 oz. Aurora diced tomatoes
  • 2 cups mixed beans

Step 1

Brown the celery and onion in some olive oil. Stir in the salt and pepper; cook. Stir in the garlic; cook. Stir in the tomato paste; cook. Add the diced tomatoes, stock, water and beans. Cook in pressure cooker for 37 minutes, using the slow release method.
