Ingredients

  • 2 (10 ounces) packages frozen spinach
  • 1 (6 ounces) package chicken flavored Stove Top. stuffing
  • 1 cup grated Parmesan Cheese
  • 6 eggs, lightly beaten
  • 3/4 cup melted butter
  • Salt and pepper to taste

Preparation

Step 1

1. Cook spanach according to package and drain in a sieve, pressing out as much moisture as possible with back of spoon.

2. In medium, combine spanach, stuffing mix, Parmesan cheese, eggs, butter and salt and pepper.

3. Mix thoroughly and roll into balls the size of large marbles, about 1-1/2 inches in diameter.

4. After on cookie sheet and freeze.

5. After balls are frozen , remove and store in plastic bag.

6. To serve: Replace frozen balls on cookie sheet, and bake at 350 degrees for 10 to 15 minutes or 7 to 10 minutes if unfrozen, until lightly brownede.

Serve hot.

Makes 80 balls.
