Ingredients

  • 4 large Eggs
  • 1 cup Granulated Sugar
  • 1 1/2 cups Cake Flour
  • 1/2 cup All Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 stick Unsalted Butter
  • 1 cup Canned Coconut Milk
  • 2 teaspoons Coconut Extract
  • 1 1/4 cup Sweetened Flake Coconut

Preparation

Step 1

Combine eggs and sugar together in the bowl of your mixer and warm over a double boiler until the sugar has dissolved and the eggs are warm to the touch. (About 115°F)

Place on the mixer with the whip attachment and whip on high speed until ribbon stage (about 5-7 minutes).

Melt the butter then add the coconut milk and extract, keep warm (or reheat to hot before adding to the recipe as follows).

Add the sifted flour, baking powder and salt all at once and blend on low speed to combine.

Prepare a liaison with the melted butter and coconut milk as shown on the video, by taking out about 1½ cups of batter and mixing with the milk/butter mixture while it is still warm/hot. (about 120° F) then add it back to the main batter with the coconut and fold to combine well.

Bake in preheated 350° oven for approximately 35-45 minutes or Until Its Done.
