Mama's Homemade Waffles

Make-Ahead: Enjoy waffles anytime by freezing a batch. Allow waffles to cool completely, then freeze on baking sheets between layers of parchment paper until firm. Transfer to an airtight container or resealable plastic bag and freeze for up to 2 months. To reheat, place on a wire rack and bake at 350 degrees F until crisp, about 10 minutes.
Top It Off:
Ham, Egg, and Cheddar: Prepare the waffles as directed. Top each waffle with 1 slice ham, 2 slices tomato, a fried egg, and 1 tablespoon grated Cheddar.
Strawberry-Honey: Prepare the waffles as directed. Top each with 1/2 cup yogurt and 1/4 cup strawberries (sliced), then drizzle with 2 teaspoons honey.

- 2 large eggs, separated
- 1 1/2 cup(s) whole milk

Step 1
In a medium bowl, whisk together the flour, baking powder, and salt.
Using an electric mixer, beat the egg whites until stiff peaks form, 2 to 3 minutes; set aside.
In a large bowl, whisk together the egg yolks, milk, and butter. Add the flour mixture, stirring just until incorporated. Gently fold in the whites until no streaks remain.
Cook in a waffle maker according to the manufacturer's instructions until golden brown. Serve with your favorite toppings.
