Ingredients

  • 4 4oz chicken breasts, boneless, skinless
  • 1 large garlic clove, chopped fine
  • 2 T fresh parsley, chopped
  • 1 T fresh tarragon, chopped
  • 1 T fresh basil, chopped
  • 2 T fresh chives, chopped
  • 1 T fresh thyme
  • 1/2 C fresh bread crumbs
  • 1/8 tsp pepper
  • 4 T dijon mustard

Step 1

Grate the untoasted bread w a hand grated to make the crumbs. preheat oven to 475. In a bowl, combine garlic, parsley, tarragon, basil, chives, thyme, bread crumbs and pepper. Brush both sides of the chicken breasts with mustard, then roll them in the herb mixture to coat. Roast the chicken uncovered in the oven for about 15 minutes-or until the internal temp reads 165 when probed w a meat thermometer. Creamy Mustard Gravy goes well with this dish.
