Ingredients

  • 1 or 2 pkgs cocktail weiners
  • 2 Tbsp cornstarch
  • 1 20 oz. can pineapple chunks, saving the juice
  • 1/2 cup Coco Lopez Real Cream of Coconut
  • 2 Tbsp. mustard
  • 1/4 tea. garlic powder
  • 1 green or red pepper, cut into chunks
  • 1 8 oz. can water chestnuts, drained and halved

Preparation

Step 1

In large skillet heat sausages.

In small bowl, stir together cornstarch, pineapple juice, Coco Lopez, mustard, and garlic powder. Mix well. Add to sausage in the skillet.

Cook and stir until thickened. Add pineapple chunks, bell pepper and water chestnuts.

Put sausages on skewers with pineapple chunks, pepper strips and water chestnuts. Drizzle with sauce.

Makes about 40 bites
