QUINOA****Quinoa Crispies

15/03/15 - I did 2 or 3 tablespoons of cooked quinoa for a salad. Nice crunch but they did get a bit soggy on resting. Try to do as close to eating as you can, I guess. Also, I think they would be more attractive with red rather than white quinoa

- Quinoa Crispies:
- 1/4 cup white or red quinoa
- olive or vegetable oil, for frying (1 tablespoon assumed absorbed)
- Kosher salt
- MAKES 1/2 cup / 8 - 1 tablespoon servings
- Smoky Quinoa Crumbs:
- 1 teaspoon smoked paprika

Step 1
Quinoa Crispies:
1. In a medium saucepan of salted boiling water, cook the quinoa until just tender, about 12 minutes. Drain well in a fine sieve and spread on a rimmed baking sheet. Let stand, tossing occasionally, until cooled and dry, about 30 minutes.
2. Set a fine sieve over a heatproof bowl. In a medium skillet, heat 1/4 inch of oil until shimmering. Add the quinoa and fry over moderate heat, stirring, until the sizzling subsides and the quinoa is crisp, about 2 minutes. Drain the quinoa in the sieve and transfer to paper towels. Season with salt.
Smoky Quinoa Crumbs:
Add 1 teaspoon smoked paprika to quinoa after drying, toss well and proceed with recipe.
