Ingredients
- 3 lbs. beef brisket
- salt and pepper
- 2 Tbsp. oil
- 5 cloves garlic, smashed
- 1 onion, thin sliced
- 1 Tbsp. chili powder
- 2 tea. ground coriander
- 2 tea. ground cumin
- 1/4 cup apple cider vinegar
- 1 1/2 cups water
- 1 14 oz. can tomatoes with juice
- 1-2 whole canned chipotle chiles
- 2 bay leaves
- 1/4 cup molassas

Step 1
Brown brisket in oil, salt and pepper. Transfer to the crock pot.
Add garlic, onion, chile powder, coriander, cumin to drippings in the skillet and stir approx. 1 minute.s
Add vinegar and boil until almost gone, scraping bottom of pan with wooden spoon. Stir in water and pour over brisket.
Add tomatoes and juice, chipotles, bay leaves and molasses.
Cover and cook on low 10 hours.
To serve - strain sauce, skim fat and simmer to 2/3's volume to thicken. Shread pork and serve with sauce.
