Sweet and Hot Jalapeno Glaze
By KennyB07
I created this Jalapeno glaze especially for my Jalapeno smoked ribs recipe. Tender pork spare ribs are first soaked in a Jalapeno marinade , and are then slow smoked for hours. If you like the flavor of Jalapeno peppers, you'll like this. The idea is simple; the results are pleasantly aggressive.
Over medium heat, bring the ingredients to a boil. Lower the heat and simmer the glaze for three minutes. Cover the pan, remove it from the heat, and allow the glaze to cool.
This is a two-for-one recipe. It makes a jalapeno barbeque sauce, plus it doubles as a candied jalapeno recipe. Strain out the jalapeno slices, and be sure to save them, since they will be used later.
* For less heat, remove seeds and membranes. Wear gloves if sensitive to hot peppers.
Brush a very light coat of the glaze onto the smoked spare ribs immediately before serving. Just a touch of this Jalapeno Glaze adds a sweet, hot, and tangy kick to your ribs. And don't forget to drop on a few of the candied Jalapeno slices...they taste great!
