Ingredients
- 4 chicken cutlets
- Ground almonds
- 2 c rice
- 4 c chicken broth or water or a combo of both
- 1 bell pepper finely chopped
- Olives
- Artichokes (optional)

Preparation
Step 1
1. Coat your chicken with the ground almonds – sauté in a pan until nicely browned then place in a 350 oven to fully cook (about 10 – 20 mins)
2. Wash your rice and put into a pot, add 4 c of liquid. Once the rice is half cooked add your chopped veggies and finish cooking both.
**Sauce**
3. 2 oranges thinly sliced in a pan; to this add 1 c white wine and 2 tsp of butter. Cook for a few minutes to reduce slightly. Drizzle all over chicken and serve.
