Ingredients

  • 12 ounces scallops (bay or sea scallops both work well)
  • 2 strips bacon, diced
  • 1 medium onion, diced
  • 2 Idaho potatoes, peeled and cut into 1" cubes.
  • 1 teaspoon flour
  • 1 quart heavy cream
  • Salt and pepper to taste

Preparation

Step 1

In a medium saucepan over low heat, render the bacon until crisp.

Add onions and sauté for 4 minutes.

Add potatoes and flour. Cook for 4 minutes.

Slowly add heavy cream. Simmer for 20 minutes.

Add scallops and simmer for 8-10 minutes. Season to taste.
