Western Frittata

Ingredients
- 2 Tablespoons vegetable oil
- 1 small onion, chopped
- 1/2 green bell pepper, seeded and diced
- 6 ounces boiled ham, diced
- 8 large eggs
- salt and pepper
- 1/2 cup shredded cheddar

Preparation
Step 1
1. Preheat broiler and set rack about 6 inches from heat source.
2. Warm oil in a large, ovenproof nonstick skillet over medium-high heat. Add onion and pepper and cook, stirring, until softened, about 3 minutes. Stir in ham and saute 1 minute.
3. Whisk eggs with salt and bepper until smooth and blended. Pour evenly over mixture in skillet. Place skillet over medium-low heat and cook, shaking often, until frittata is almost set in center and lightly browned on the bottom, 10 to 12 minutes. Sprinkle cheese over top.
4. Trnasfer skillet to broiler and cook, wathcing carefully to avoid burning, until cheese is bubbly, 1 to 2 minutes. Cut into wedges and serve hot or at room temperature.
*The frittata will start to set after about 3 minutes on top of the stove. At that point, run a long spatula underneath to loosen it, making it easier to shake the pan and ensure even cooking.
