Ingredients
- 1 lb. smoked sausage, cut into bite-size slices (andouille or Polish)
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 clove garlic, minced (or 1/4 tsp. MINCED GARLIC)
- 2 Cups white rice
- 4 Cups water
- 1 TB. CHICKEN SOUP BASE
- 1 15 oz. can chopped or diced stewed tomatoes
- 1-2 tsp. CAJUN SEASONING
- 1 tsp. THYME

Preparation
Step 1
Add the smoked sausage to a large skillet or Dutch oven over medium heat. After the sausage has started browning, add the onion, green pepper and garlic (if using fresh). Cook until the vegetables are soft and the onion is translucent. Add the remaining ingredients, including MINCED GARLIC if using. Bring to a boil, reduce heat and simmer until all the liquid is absorbed, 15-20 minutes
