Ingredients
- 1 onion, chopped
- 1 carrot, peeled and grated
- 1 stalk celery, chopped
- 2 teaspoons olive oil
- 5 cups nonfat beef broth
- 1 teaspoon ginger root, grated
- 1/2 teaspoon cumin
- 1/2 teaspoon pepper
- salt
- 3 tablespoons tomato paste
- 1 pound lean ground turkey
- 3 tablespoons cornstarch
- 2 egg whites
- 3 tablespoons cilantro
- 1 clove garlic
- 1/2 teaspoon salt
- 1 cup spinach, shredded
- 2 tomatoes, chopped
- 1/4 cup cilantro, chopped

Preparation
Step 1
1. Saute onion-celery in oil.
2. add broth-s&p and tomato paste. Cover and simmer 25 mins.
3. Mix turkey-salt. Shape into 3/4" balls. Drop into soup with spinach. Cook 10-15 mins.
4. Add tomato and cilantro.
