  • 4 equal pieces of chicken steaks
  • flour and salt and pepper,hot paprica
  • 1/2 cup buttermilk and egg
  • calola oil for frying
  • Truffled cream gravy
  • Mash with caramelized shallots

Preparation

Step 1

Preheat your oven to 250 F .Pound with a meat tenderizer until 1/4 inch uniform thickness.Place flour in a large bowl and season with salt,pepper and hot paprica.Mix eggs in another large bowl with buttermilk.
Take each piece of meat and coat in flour mixture.Transfer into egg mixture and then dip back into flour again.Using a large cast-iron skillet,heat one inch of canola oil to 350 F.Place each floured steak carefully into oil one at a time.Cook on each side for 2-3 min.until crust is crispy,and steak is done through/Place on paper towels and in a low oven until ready to plate.Reserve pan drippings for cream gravy.
