Ingredients

  • 3/4 cup flour
  • 1/2 tsp. grated nutmeg
  • 1 tsp. baking powder
  • 1 cup lowfat ricotta cheese
  • 2 eggs
  • 1/3 cup milk
  • 1/3 cup canola oil
  • 1 large lemon, juice and zest from
  • confectioners' sugar
  • maple syrup

Preparation

Step 1

1. Combine the dry ingredients.

2. In a separate bowl combine all of the wet ingredients, then mix with the dry ingredients.

3. Pour approximately 1/4 cup batter on a non-stick frying pan (400 degrees Fahrenheit). Cook until golden brown. Flip once. Arrange on plate and dust with confectioners's sugar. Garnish with a wedge of lemon and serve with maple syrup.

These were delicious! Very light and lemony tasting, made for a great, non-heavy meal.
