Ingredients

  • 1/2 pkg. (17.3 oz size) Pepperidge Farm Frozen Puff Pastry sheets ( 1 sheet)
  • 1 egg
  • 1 tabl. water
  • 1/2 cup apricot preserves or seedless Raspberry Jam
  • 1/3 cup dried cranberries, softened
  • 1/4 cup toasted sliced almonds
  • 1 Brie cheese round ( about 1 pound)
  • Pepperridge Farm Water Crackers

Preparation

Step 1

1. Thaw pastery sheet at room temperature 30 minutes. Preheat oven to 400 degrees. Mix egg and water and set aside.
2. Unfold pastry on lightly floured surface. Roll into a 14 inch square. Cut off corners to make a circle. Spread preserves to within one inch of pastry edge. Sprinkle cranberries and almonds over preserves. Top with cheese. Brush edges of circle with egg minture. Fold 2 opposite sides over cheese. Trim remaining 2 sides to 2 inches from cheese. Fold these two sides in to make a round. Press edges to seal. Place seamside down on baking sheet pan. Decorate top with pastry scraps if desired. Brush with egg mixture.
3. Bake at 400 degreees for 20 minutes or until golden brown. Let stand one hour. Serve with crackers.

TIP: To soften cranberries...in bowl mix dried cranberries with 1/2 cup hot water. Let stand one minute, drain and pat dry.
