Ingredients

  • 1 1/2 TBS tarragon vinegar
  • 4 oz goat cheese, crumbled, divided (1 oz / 3 oz)
  • 4 TBS olive oil
  • 2 TBS water
  • 2 TBS chopped fresh tarragon
  • 6 cups mixed greens (such as frisee, arugula, and spinach)
  • 4 oz toasted walnuts

Preparation

Step 1

Whisk vinegar and 1 oz goat cheese in large bowl until smooth. Gradually whisk in oil, then 2 TBS water and fresh tarragon. Season with salt and pepper. (Dressing will look curdled). Add greens to bowl. Toss to coat. Top with 3 oz goat cheese and walnuts. Toss.

Makes 4 servings. Each serving = 13 Weight Watchers points.
