Ingredients
- 1/4 C sliced almonds
- 1/4 C sesame seeds
- 2 tsp cumin seeds
- 2 TBL fresh thyme
- 1 tsp black peppercorns
- 2 lg egg whites, lightly beaten
- 4 (6oz) skinless, boneless chicken breast halves
- 1/2 tsp salt
- 2 tsp olive oil
- cooking spray

Preparation
Step 1
preheat oven to 350
place 1st 3 ingredients in sm. dry skillet over med hat
cook 2 min or until lightly browned shaking pan frequently
remove from heat & cool slightly
place nut mixture, thyme & peppercorns i spice or coffee grinder
pulse mix. 15 times to coarsely chop
place nut mix. in shallow pan
place egg whites in another shallow pan
dip chicken in egg white & sprinkle w/ salt
dredge in almond mixture
heat oil in lg. nonstick skillet, coated w/ cooking spray over hem-high heat
add chicken to pan
saute 2 min on each side or until goldden
place chicken on baking sheet coated w/ cooking spray
bake @250 for 12 min or until done
