- 2 english muffins, split
- butter or marg
- 4 slices boneless cooked ham or canadian bacon (1/8-1/4" thick)
- 4 eggs
- hollandise sauce - warmed
- paprika & parsley

Preparation
Step 1
toast muffin halves
butter them
keep warm
broil or pan-fry slices of ham
keep them hot
poach eggs
to serve:
place slice of ham on each muffin half
top w/ poached egg
cover w/ warm hollandise
sprinkle w/ paprika
garnish w/ parsley
serve at once
