Ingredients

  • Cookies:
  • 1 cup almond flour
  • 1/8 plus 1/16 tsp. salt
  • 1/8 tsp. baking soda
  • Stevia to taste
  • 1 1/2 Tbsp. coconut oil
  • 1 Tbsp. almond milk
  • 1 tsp. vanilla
  • 18 about 18 tsp. peanut butter or any nut butter
  • Healthy Chocolate Sauce:
  • 4 Tbsp. virgin coconut oil
  • 1/4 cup cocoa
  • 2 tsp. vanilla
  • Stevia to taste

Preparation

Step 1

Cookies:
Combine all liquid ingredients.
In a separate bowl, combine dry ingredients and mix very well.
Mix wet and dry ingredients and keep stirring, breaking up clumps. (It may seem dry at first. You can add 2 tsp milk or oil, but no more).
Roll out dough between two sheets of parchment paper.
Cut into circle cookies with a small glass or cookie cutter.
Freeze dough at least 20 minutes before baking.
Bake at 325 on lightly greased baking sheet for 10-13 minutes, depending on desired crispness.
Let cool 10 minutes before attempting to remove cookies from baking sheet.
Spread about 1 tsp of nut butter on each cookie.
Dip each cookie in choocolate sauce.

Chocolate Sauce:
Melt the coconut oil in the microwave.
Add vanilla and sweetner and stir.
Add cocoa and stir, stir, stir.
