Riet's Favorite Oatmeal Raisin Cookies

Ingredients

• 3/4 c. firmly packed brown sugar
• 1/4 c. plus 2 T. margarine
• 1/4 c. sugar
• 1 egg
• 1/4 c. plus 2 T>skim milk
• 1 tsp. vanilla extract
• 1 1/2 c. all-purpose flour
• 3/4 tsp. baking soda
• 1/2 tsp. cinnamon
• 1/4 tsp. salt
• 1/4 tsp. nutmeg
• 1 1/2 c. quick cooking oats
• 3/4 c. raisins
• Vegetable cooking spray

Preparation

Step 1

Cream first 3 ingredients at medium speed of electric mixer until light and fluffy. Add egg and beat well. Add milk and vanilla. Combine flour, baking soda, cinnamon, salt and nutmeg; gradually add to creamed mixture. Stir in oats and raisins. Drop rounded tablespoonfuls of dough on baking sheets sprayed with cooking spray. Bake at 375 degrees for 9 minutes or until browned. Yield: 4 dozen.
