Marinated Crab Claws

When I was growing up in Shreveport, a very special occasion had to be celebrated at Ernest's Restaurant and you absolutely had to start off the evening with their marinated crab claws. This is the closest I've found to their recipe.

Ingredients
- 1 C green onions (tops and bottoms)
- 1 C celery, chopped
- 4 garlic cloves
- 1 C chopped parsley
- 2 C Spanish olive oil
- 2 C tarragon vinegar
- juice of 6 lemons
- 2 Tbsp salt
- 1 Tbsp pepper

Preparation
Step 1
Mix and let stand at room temperature for up to 48 hours (but sometimes I can only wait overnight). Marinate crab claws for 30 minutes before serving. I serve either chilled, at room temperature or heated quickly in the microwave but I always include warm french bread for dipping.
