Ingredients

  • 1 pt. small, navy beans
  • 1 med. onion
  • 1/4 lb. Salt Pork
  • 3/4 tsp. dry mustard
  • 2 tsp. salt
  • 1/8 tsp. ginger
  • 2 Tbs. brown sugar
  • 1/4 cup, molasses
  • 1 1/2 cups, boiling water

Step 1

Soak beans overnight, drain and cover with water. Cook for 1/2 hr. or until beans crack. Rinse with water and put in bean pot with the onion in the bottom. Pour boiling water over about 1/4 lb. of salt pork. Scrape and score (cut about 1/2 in. apart and not quite through, so that it stays in one piece. Bury in top of beans. Mix all remaining ingredients together. Add the mixture to the beans and bake at 275 or 300 degrees for about 8 hrs. until beans are well done and top is browned.
