Ingredients
- 8 oz uncooked spaghetti
- 1 tsp grated lemon rind
- 3 TBS fresh lemon juice
- 3 TBS olive oil
- Kosher salt to taste
- Crushed red pepper to taste
- 1 1/2 oz shaved Parmigiano-Reggiano cheese
- 1/4 cup chopped fresh basil
Preparation
Step 1
1. Cook spaghetti according to package directions. Drain. Place pasta in a large bowl.
2. Combine remaining ingredients in a small bowl, stirring with a whisk.
3. Drizzle juice mixture over pasta; toss well to coat. Sprinkle pasta with cheese and basil.
Makes 4 servings. Each serving = 9 Weight Watchers points.
