- Pickerel cheeks
- flour
- canola oil
- 1 oz sambuca
- 1/2 cup cream

Step 1
Season the pickerel cheeks and dust them in flour. Saute in canola oil very briefly. Remove from pan, drain oil. Add Sambuca. Cook off alcohol, add cream and reduce until thick.
