Ingredients

  • 2 lbs. black beans
  • 7 Tbs. garlic salt
  • 4 bay leaves
  • 1/2 cup, olive oil
  • 4 green peppers
  • 2 lg. onions, chopped
  • 4 tomatoes, chopped
  • 4 Tbs. cumin
  • 4 Tbs. Italian Seasoning
  • 2 Tbs. Hot sauce
  • 1 cup, red wine vinegar

Step 1

Cover beans with water in a lg. pot, add 5 Tbs. garlic salt abd bay leaves, boil until beans are soft. In a pan, saute in olive oil, onions, green peppers and chopped tomatoes. To this mixture add the cumin, Italian seasoning, hot sauce, 2 Tbs. garlic salt and vinegar. Add the black bean mixture and cook down. Serve over steaming rice. Garnish with drops of sour cream, chopped green onions and tomatoes.
