Ingredients

  • 1 lg. zucchini, diced and peeled
  • 1/2 c. onion, diced
  • 2 1/4 c. Stove Top stuffing
  • 1 c. sour cream
  • 3/4 c. carrots, sliced
  • 6 T. margarine
  • 1 can cream of chicken soup

Step 1

Cook zucchini in salty water; drain. Stir in 3 tablespoons margarine. Cook carrots and onions until tender; drain. Stir together with 1 1/2 cups stuffing, soup and sour cream. Bake at 350 degrees for 30 minutes in at 9x13-inch pan. Melt 3 tablespoons margarine and mix with 3/4 cup stuffing. Sprinkle over top and bake for 5 minutes.
VARIATIONS: Add sliced mushrooms, peas, corn, etc.
