These are great for breakfast, but can also be a delicious dinner! They are made like a crepe and can be filled with fruit, if desired. They go fast, by the time you are done with all the batter, they will have all been eaten. Jordan loves these!

Ingredients

  • 1 cup milk
  • 3 or 4 eggs
  • 3/4 cup flour
  • 1 teaspoon sugar
  • 1/4 teaspoon salt

Preparation

Step 1

Add dry ingredients to milk and mix. Add eggs, one at a time, and mix.

Put butter into the pan each time before you make a pancake.

Pour a small amount of batter into the pan and swirl the batter around to coat the bottom of the pan in a thin layer.

Let bake for a few minutes, then flip and cook the other side for another minute or two, until lightly golden.

To serve: spread each pancake with butter while it is still hot. Sprinkle with sugar and roll up the pancake from one end. Sprinkle with powdered sugar, if desired.

You could also serve with strawberries and whip cream on the side!
