Ingredients

  • 2 cups self-rising flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons cold, unsalted butter
  • 2 oz. goat cheese with herbs
  • 1/2 cup buttermilk
  • 1/2 cup 2% milk
  • 1/4 cup grated parmesan cheese
  • Extra butter to grease pan and top biscuits

Preparation

Step 1

Place one 10-inch cast iron skillet into the oven while it is preheating to 425 degrees.

Place flour, salt, baking soda and baking powder into a medium sized bowl. Cut in the butter and goat cheese using a fork or pastry blender. Make a well in the middle of the dry ingredients and pour in the buttermilk and 2% milk. Stir until the mix is moistened, adding an extra tablespoon of milk, if needed. Dough should be fairly moist.

Remove the skillet from the oven and place a tablespoon of butter into it. When the butter has melted, drop 1/4 cupfuls of batter into the pan. Use a muffin scoop to drop the batter, if you have one. Brush the tops of the biscuits with melted butter.

Bake 14-16 minutes until lightly browned on the top and bottom.

Remove from the oven and sprinkle with the grated parmesan cheese. Repeat as necessary for the remainder of the batter.

Eat them warm. Enjoy!
