Mashed Sweet Potatoes with Marsala 0 Picture

Ingredients

  • 1 pound sweet potatoes
  • 1 1/2 tablespoons brown sugar
  • 1 1/2 tablespoons lowfat buttermilk
  • 1 tablespoon Marsala wine
  • 1 tablespoon butter
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • Thyme sprigs (optional)

Preparation

Step 1

1. Preheat oven to 425°.

2. Bake potatoes at 425° for 1 hour and 10 minutes or until tender; cool slightly.

3. Cut each potato in half lengthwise, and scoop out pulp. Discard skins.

4. Place potatoes and remaining ingredients in a small saucepan; mash to desired consistency. Cook over low heat 2 minutes or until thoroughly heated. Garnish with thyme, if desired.

This was good - but nothing terribly memorable.
