  • 4 c milk
  • 2 tsp instant coffee powder
  • 4 tablespoons of corn starch
  • 4 yolks
  • 8 oz of chocolate
  • 2 c sugar
  • 1 tsp vanilla
  • 1 c of mascarpone cheese

Step 1

1. In a sauce pan; heat 3 c of milk and coffee.
2. In a separate bowl mix together the corn starch and 1 c of cold milk and the egg yolks. When the milk is almost heated through add the sugar and vanilla to the egg and cold milk.
3. Chop the 8 oz of chocolate and put in a separate bowl.
4. **once you have combined the cold milk egg mixture to the hot milk mixture - **PUT THE MILK BACK ON THE HEAT** to allow the corn starch to gloss and thicken the pudding. It should come up to a simmer - stir consistently.
5. pour 1/2 the mixture into the chocolate and stir to combine - leave the other 1/2 plain.
6. Cover the pudding so that the plastic touches the surface of the pudding so no skins form on top of the pudding.
7. After the pudding has cooled add 1 c of mascarpone cheese to the plain coffee pudding.
