- Inspired by an episode of Throwdown with Bobby Flay where he takes on the Vermont Brownie Company – we were left drooling over their dark chocolate chevre brownies and dying to try them. Here’s our take on this very grown up and decadent dessert recipe.
- 8 oz chevre (goat cheese), softened
- 2 Tbsp butter, unsalted and softened
- 1 1/2 Tbsp honey
- 2 large eggs
- 1 1/2 Tbsp all purpose flour

- 12 oz bittersweet chocolate, melted
- 2 sticks butter, unsalted and softened
- 3/4 cup raw sugar
- 4 eggs
- 1 cup all purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt

Step 1
Preheat the oven to 350º. Lightly butter a medium rectangular baking dish and set aside. Using an electric mixer, combine the chevre and butter in a small bowl and beat until light and fluffy. Add the honey and continue beating until well combined. Add the two eggs and flour, beating well after each egg. Set the mixture aside.
In a small saucepan, mix the bittersweet chocolate and butter over low heat until smooth. Allow the mixture to cool slightly. In a large bowl beat together the sugar and eggs until thickened, about two minutes. Add in the flour, baking powder and salt and blend until well combined. Add in the chocolate mixture and the vanilla extract and beat for another minute.
In the baking dish, pour out half of the brownie batter. Using a rubber spatula, spread the chevre mixture over the chocolate and top with the remaining brownie batter. Using the tip of a knife, gently swirl the mixtures together to form a marble design. Bake in a preheated oven at 350º for 30-35 minutes or until a toothpick inserted in the center of the brownie comes out clean. Cool before cutting and enjoy with a very tall glass of cold milk!
