Ingredients

  • 1 cup light coconut milk
  • 2 1/2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 1 pound lean ground beef, or pork
  • 1/2 cup chopped scallion
  • 1/4 cup leek, minced
  • 2 tablespoons cornstarch
  • 1 tablespoon flour
  • 1 tablespoon sesame oil
  • 1 tablespoon minced ginger
  • 2 teaspoons minced chilies
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 teaspoons olive oil
  • 1/4 cup basil, or Thai basil
  • 1 tablespoon lemon zest

Preparation

Step 1

1. Combine coconut-curry powder in a large saucepan.

2. Place pork-pepper in a mixing bowl. Knead to combine and divide into 10 balls.

3. Heat oil in a skillet. Add meatballs and cook until browned on all sides; 8-10 minutes. Transfer to a plate lined with paper towels.

4. Bring coconut milk mixture to a boil. Add meatballs, cover and simmer 8 minutes. Serve over lettuce and garnish with basil and lemon.

This was great! Used ground turkey, onion instead of leek. Served with brown rice instead of lettuce - and would do that again to take advantage of the sauce. Delicious and a repeater.
