Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 fennel bulb, chopped
- 1 package spinach, thawed and squeezed dry
- 1/4 tsp nutmeg
- 1 cup fresh bread crumbs
- 1/2 cup romano cheese
- 1/2 cup heavy cream
- 1 tsp salt
- 2 pounds ground beef, or meatloaf mix
- 2 eggs

Preparation
Step 1
1. Heat oven to 375. line 9x13" pan with foil, spray.
2. Saute onion and fennel in oil until tender and golden. Take off heat.
3. Remove half of veggies and put into a bowl. To remaining veggies in skillet, add spinach, nutmeg, ½ cup breadcrumbs, ¼ cup romano, ¼ cup cream, ¼ tsp salt.
4. To veggies in bowl, add beef, eggs, rest of crumbs, cheese, cream and salt.
5. Line loaf pan with plastic wrap. Spoon in half of meat, top with spinach, then rest of meat. Invert into ox13" pan, discard plastic wrap.
6. Bake 75 mins, until 155 degrees. Let stand 10 mins before cutting.
This was great! Only thing keeping it from an excellent was the need for some sort of sauce - something cream/sour cream based - maybe a mushroom sauce? Might also leave out or cut down on the breadcrumbs in the spinach mixture to make it more creamy. Used dried breadcrumbs (and cut down by about ¼ cup) and FF half and half instead of cream. Just delicious!!
