  • 4 c. wheat flour, divided
  • 1/2 c. nonfat dry milk
  • 1 T. salt
  • 2 pkgs. dry yeast
  • 3 c. flour
  • 1/2 c. honey
  • 2 T. vegetable oil
  • 4 to 4 1/2 c. white flower

Preparation

Step 1

In a large mixing bowl, combine 3 cups wheat flour, dry milk, salt and yeast. In saucepan over low heat, heat 3 cups water, honey and vegetable oil. Get it just warm. Pour the water mixture over flour mixture; blend at low speed for 1 minute. Blend at medium speed for 2 minutes. By hand, stir in 1 cup whole wheat flour and 4 to 4 1/2 cups all-purpose flour. Knead on floured board for about 5 minutes. Put dough in greased bowl and let rise, about 45 to 60 minutes, until doubled in bulk. Punch down and divide in 1/2. Shape each 1/2, place in greased loaf pan. Cover and let rise 30 to 45 minutes, until doubled in bulk. Bake at 375 degrees for 40 to 45 minutes until loaves sound hallow when tapped lightly. Remove from pan and cool on wire rack.
